Almond Crusted Salmon with Cherry Glaze Almond Crusted Salmon with Cherry Glaze
Salmon is complimented with a cherry glaze and topped with sliced almonds. Great for a weeknight dinner and good for entertaining guests.
SERVES: 4
PREP TIME: 5 Minutes
COOK TIME: 20 Minutes
Ingredients

Salmon:
2, 16 oz. Salmon Fillets
2 Tbsp. Butter, melted
Salt and Pepper to taste

Dried Cherry Glaze:
2 cups Apple cider or Apple juice
7 oz. Dried Cherries
1 cup Sugar

Asparagus:
1 bunch Asparagus
1 Tbsp. Lemon Juice
3 Tbsp. Butter
Sea Salt, to taste

Directions
Step 1  Salmon:
Lightly brush the salmon fillets with butter and season them with salt and pepper. Bake the salmon uncovered in a greased baking dish for 15-20 minutes in a 375° oven.
 
Step 2  Dried Cherry Glaze:
Bring apple cider to a simmer, remove it from the heat and add dried cherries. Let it stand for 10 minutes, then return it to the stove and add sugar. Cook it over low heat until it thickens, and serve it on the side or drizzle it over the salmon and top with toasted sliced almonds.
 
Step 3  Asparagus:
Steam the asparagus until it's tender. Melt butter and add lemon juice. Then pour the lemon butter over the asparagus and sprinkle it with sea salt.
